Pepparkokar (Mary's Swedish Christmas cookies)F

Traditional Swedish Christmas cookies.

Ingredients

  • 10 cups all-purpose flour measured carefully, set aside
  • 1 lb butter
  • 3 cups sugar
  • 2 tbsp ground cloves
  • 2 tbsp cinnamon
  • 2 tbsp ground ginger
  • 1 tbsp baking soda
  • 2 tbsp corn syrup

Instructions

  • Cream together butter and sugar.
  • In a pan, mix and bring to a boil: ground cloves, cinnamon, ground ginger, baking soda, and corn syrup.
  • Pour the hot mixture over the butter and sugar mixture. Stir until the sugar dissolves.
  • Blend in flour 1 cup at a time.
  • Wrap the dough and store in the fridge overnight.
  • Roll out dough using a noodle maker to 1/8 inch thick.
  • Bake on ungreased cookie sheets for approximately 6 minutes at 375°F (190°C).
  • Store airtight or freeze for best results.
