Pepparkokar (Mary's Swedish Christmas cookies)F
Traditional Swedish Christmas cookies.
Ingredients
- 10 cups all-purpose flour measured carefully, set aside
- 1 lb butter
- 3 cups sugar
- 2 tbsp ground cloves
- 2 tbsp cinnamon
- 2 tbsp ground ginger
- 1 tbsp baking soda
- 2 tbsp corn syrup

Instructions
- Cream together butter and sugar.
- In a pan, mix and bring to a boil: ground cloves, cinnamon, ground ginger, baking soda, and corn syrup.
- Pour the hot mixture over the butter and sugar mixture. Stir until the sugar dissolves.
- Blend in flour 1 cup at a time.
- Wrap the dough and store in the fridge overnight.
- Roll out dough using a noodle maker to 1/8 inch thick.
- Bake on ungreased cookie sheets for approximately 6 minutes at 375°F (190°C).
- Store airtight or freeze for best results.
