Buttermilk Pancakes

Fluffy buttermilk pancakes.

Ingredients

  • 2 ⅛ cups all-purpose flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 ¼ cups buttermilk (1/3 sour cream with regular milk is just as good. Cream cheese is also great.)
  • 2 large eggs (lightly beaten, room temperature preferred)
  • 1 tsp vanilla extract
  • ¼ cup unsalted butter (melted and cooled)

Instructions

  • Mix dry ingredients together in a bowl
  • Combine wet ingredients in a separate bowl
  • Add wet ingredients to dry and mix until just combined
  • Cook on a hot griddle until bubbles form, then flip
  • Serve with maple syrup and butter
