Buttermilk Pancakes
Fluffy buttermilk pancakes.
Ingredients
- 250 g all-purpose flour
- 3 tbsp sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 530 ml buttermilk
- 2 whole large eggs (lightly beaten, room temperature preferred)
- 1 tsp vanilla extract
- 57 g unsalted butter (melted and cooled)

Notes
- Room temperature eggs work best
- Let the melted butter cool slightly before adding to the batter
Instructions
- Mix dry ingredients together in a bowl
- Combine wet ingredients in a separate bowl
- Add wet ingredients to dry and mix until just combined
- Cook on a hot griddle until bubbles form, then flip
- Serve with maple syrup and butter
